Pandan Mango Madeleines - PS' Favorite: I LOVE pandan! Ever since Yao made me try this South East Asian leaf I have been addicted to it. It took us many many trials and errors and ultimately meeting with a French-Viet chef during one of our trips to Paris to finally create the best pandan crème pâtissière: not too sweet, not too grassy or bitter yet super flavorful! We complemented it with a hint of home-made mango jam and... VOILA!
